A chalkboard lists a short run of panini built from fresh, seasonal ingredients, with combinations such as wild boar and polenta, stewed donkey, herring with pecorino and tomato, or sardines with orange and puntarelle. Order at the counter and add a glass of the house red, served alongside the panini.
