Da Nerbone has been working its corner of the Mercato Centrale since 1873, and the line at lunch proves the formula still holds. Order at the counter, then grab a spot at the marble tables in front. The move is a panino con lampredotto, tripe finished with salsa verde, or the boiled beef version with new oil and a creamy green sauce. A handwritten board adds plates of trippa fiorentina, peposo with olives, porchetta and pasta al ragu. The stall keeps market hours and is closed on Sundays.
