A San Frediano institution since 1950, serving bistecca alla fiorentina, tripe, lampredotto and Tuscan soups beneath vaulted ceilings in rooms that once belonged to a convent.
The Cambi story starts in 1950, when Silvano and Bruno opened a fiaschetteria in San Frediano, pouring wine and making panini for neighbors and the sand diggers working the Arno. Their sons Fabio and Stefano now run it as a full trattoria under vaulted ceilings, in rooms that were once part of a convent. The bistecca alla fiorentina is the reason to come, sold by weight. Round it out with ribollita or pappa al pomodoro, pappardelle al cinghiale, and lampredotto in salsa verde, then finish with the warm apple sfogliatina.
