Volume occupies the former Bini workshop on Piazza Santo Spirito, a craft shop founded in 1887 that made wooden hat forms and later, with designer Mario Mariotti, turned them into sculptural objects. The forms, tools and workbenches stayed, so the bar reads like a small living museum with a drinks list. Aperitivo runs every evening, and the menu keeps things classic: Negroni, Old Fashioned, Espresso Martini, a trio of house mules and a Tuscan-leaning alternative spritz, plus a gin selection and craft beer. Live music nights keep the old workshop loud and full.
