Il Santo Bevitore fills a vaulted room on Via di Santo Spirito with bare brick, wooden beams and shelves of bottles, and on warm nights tables spill out under the arch. The kitchen works from Tuscan tradition with a lighter touch: ribollita and chicken liver terrine sit beside hand-cut beef tartare, fresh pastas and grilled fish. A long run of cheeses and cured meats, including Slow Food presidia, makes it easy to graze with a bottle. The same team runs Il Santino, a small wine bar next door, and the S.Forno bakery on Via Santa Monaca, which bakes the bread served here.
