Badia a Coltibuono
The estate restaurant beside an eleventh century Vallombrosan abbey in the Chianti hills, cooking seasonal Tuscan dishes from local and often organic produce, with a tasting menu that includes four estate wines.
Badia a Coltibuono was founded by Vallombrosan monks in 1051, and the family that bought it in 1846 still makes wine and olive oil here. The restaurant, run directly by the estate, sits a short walk from the old abbey with a wide view across Chianti and the Valdarno. The kitchen works mostly with local produce of known origin, organic where possible, and borrows ideas from all over Italy: pici all'aglione, wild boar pappardelle scented with monastery herbs, roe deer with its own sauce. A tasting menu comes with four glasses of the estate's wine, and Lorenza de' Medici founded one of Tuscany's first cooking schools here.
