La Sosta del Gusto sits in a medieval building next to Castello del Trebbio, the castle once owned by the Pazzi family, in the hills above Santa Brigida. Inside, barrel vaults frame the dining room, and a terrace looks out over an untouched valley. The menu shifts with the seasons and the kitchen garden, and the estate supplies the oil, saffron, farro, honey and heritage grains: expect truffle taglierino, cacio e pepe tossed in the cheese wheel, and wild boar from the family's own land as pappardelle or peposo. The Casadei family owns castle and restaurant, and the cellar has earned a Wine Spectator Restaurant Award.
