Andrea and Vieri Bista's truffle-driven Tuscan osteria has climbed to the sixth-floor terrace of Hotel Hermitage, pairing shaved black and white truffle with views over Ponte Vecchio and Palazzo Vecchio.
Osteria delle Tre Panche opened on Via Pacinotti in 1986; owners Andrea and Vieri Bista, friends since school, took the name into the historic center after a stint at Chefs Club in New York. This location occupies the halls and panoramic terrace of Hotel Hermitage, where the main rooftop looks straight at Ponte Vecchio and a second terrace faces Palazzo Vecchio. Truffle is the undisputed star, served black or white by season over first courses or with selected beef, alongside meat dishes rooted in Tuscan tradition. Book by phone and ask for the terrace in summer; the kitchen runs all day.
