From the chef couple behind Dalida, Maria Isabel is named for Laura Ozyilmaz's mother and sister, and its cooking draws a line from her home state of Guerrero to the California coast. Corn is nixtamalized in-house every day for tortillas and masa dishes, and the menu leans on local seafood: aguachile negro with yellowtail and Monterey Bay squid, a Santa Barbara uni tamalito, black cod zarandeado.
