Il Guscio
A San Frediano trattoria opened in 1986 inside a former family tripe shop, pairing grandmother Sandra's Tuscan recipes with meat and fish plates and a deep, natural-leaning wine list.
Il Guscio took over one of Florence's oldest tripperie on Via dell'Orto in 1986, when Sandra Formigli and Francesco Gozzini turned it into a trattoria; today Francesco runs it with his son Brando while Sandra still oversees the kitchen. The menu balances land and sea: maltagliati with zucchini flowers and scampi, calamarata cacio e pepe with squid, tuna tagliata with Tropea onions, duck with orange and a proper Fiorentina. Wine is the other draw, with bottles lining the walls, niche producers and a growing natural selection. Book by phone or WhatsApp; it is closed Saturday lunch and Sunday.
