A Peretola institution run by the Gori family since 1901, pairing wood-grilled bistecca, peposo and bollito with one of the deepest Chianti Classico cellars in Tuscany.
Burde has been the Gori family’s trattoria on Via Pistoiese, out past the city walls in Peretola, since 1901, and four generations have kept its bar, deli counter and dining rooms running. Paolo Gori runs the kitchen; his brother Andrea, a sommelier, runs a cellar of more than 700 Tuscan labels that the family calls the largest Chianti Classico collection anywhere. Order the bistecca from the wood grill, the peposo, pici all’aglione or the bollito with its sauces. It is mainly a lunch house: dinner is served on Fridays only.
