Kabawa is Paul Carmichael's deeply personal restaurant with Momofuku, a three-course prix fixe that draws on his Barbados upbringing and the wider Caribbean. Guests choose a starter, main and dessert, and bread service of roti with curry chickpeas and eggplant sets the tone. Mains run from black bass with yellow curry and goat to chuletas and a bone-in prime ribeye with cassareep, while desserts reach toward Curaçao with bolo di kashupete, a cashew cake, and a coconut turnover. The New York Times ranked it the best restaurant in the city in 2026, and North America's 50 Best placed it at No. 14.
