Nonna Delfina's family trattoria in hilltop Artimino, grown from meals for Medici-estate hunters into a destination for rabbit with olives and pine nuts on a terrace above the Carmignano hills.

Da Delfina began in the 1940s with Delfina cooking for hunters on the grand-ducal reserve below the Medici villa La Ferdinanda, and her home became a trattoria when tourists started arriving in the late 1950s. The family still runs it, and the dining room book carries dedications from Salvatore Quasimodo and Ardengo Soffici among other regulars. The cooking stays rural and precise: ribollita, coniglio con olive e pinoli, faraona al vin santo, stracotto with fagioli all'uccelletto and bistecca by the kilo.
