Verjus
A Jackson Square wine bar where the natural wine list is as thoughtfully composed as the French-leaning small plates it's built to accompany.
Verjus runs on the rhythm of a good bottle shop that happens to also cook: come for one glass, stay for four, and let the kitchen's tartares and rillettes do the pacing. The room is narrow and warm, brick and wood, with a bar built for leaning on while you argue over the orange wines with whoever poured them.
