Zuma is the Miami outpost of the izakaya that started in London and now turns up in the world's glossiest cities, here handed a stretch of the Miami River to match its ambition. The kitchen runs the contemporary izakaya idea across three stations at once, a sushi counter, a robata grill, and the main kitchen, so plates land when they're ready rather than in tidy courses. Come with people and order widely: the miso-marinated black cod off the charcoal in its hoba leaf, rock shrimp tempura in a creamy chilli glaze, sea bass sashimi brightened with yuzu.
