Founded by Alessio Matrone and Danilo Caruso of the international IT Restaurants group, IT Maison marks a shift from their nightlife-driven format toward a calmer, home-like concept guided by executive chef Romualdo Palladino. The kitchen's 'less is more' philosophy pairs seasonal, well-sourced ingredients with familiar, shareable dishes — from truffle-mustard suckling pig buns to a Peruvian-inflected amberjack tiradito — served inside a Regency-toned dining room or, weather permitting, the private garden.
