Empress by Boon
Chef Ho Chee Boon's modern Cantonese restaurant atop the former Empress of China in Chinatown, serving a seasonal prix fixe amid restored carved woodwork and wide views over the neighborhood.
Empress by Boon opened in 2021 in the top-floor home of the landmark Empress of China banquet hall, pairing a modern redesign with carved beams and panels restored from the original. Chef Ho Chee Boon, the former international executive chef of Hakkasan, who earned a Michelin star at its New York outpost, cooks seasonal Cantonese food with local ingredients. The dining room serves a prix fixe, largely family style, with dishes such as caramelized black char siu, roasted black cod with scallion oil and Mongolian-style wagyu with crispy taro. A tea lounge beneath a towering indoor pergola, a cocktail bar and a deep Champagne list complete it.
